Totally agree as options are endless........hundreds if not thousands of hours playing and modding.

Default Get the mods

I am still having a blast in SH5 with the Wolves of Steel mod which is a must.
For SH3 which I like for the choice of boats and and crew options you will need the GWX mod.

SH4 (I have all the variations) I have not done much with because like I said I am having a blast with SH5.

Good Luck

I'd start with sh3. Play a couple of patrols.
Then do the same with sh4 which plays on US subs.
You also have the sh4 expansion to play uboats.
Etc.

By playing a few patrols on each you will see what you prefer.
And you will also find that you will switch from one to another because the feeling isnt the same.

If you play SH3 use GWX with it. Much better.

I played a lot of SH3 which is very nice in the management of the crew, but today when I want to play a submarine game I play only on SH5 with the mod Wolves of Steel it's really top and immersive.

If you start with

SH5: get wolves of steel, it fixes most bugs and issues!

SH3: if you like realism get NYGM. Eye candy, get LSH. A mix of both, GWX.

I would not play basic sh3. At least with GWX.
Living SH is nice too.

SH4 I mostly played in basic game form.
