Unless anyone is a werewolf forensic scientist I think being able to diagnose a werewolf attack from the mangled remains is a bit of a plot stretch.
Why not create a witness or two? Somebody that got a good look at the beast but survives to tell the tale to the rest of the cast.

I was going to venture up to the nunnery but it's hard to be mobile while you're a soldier who is not on leave, or a prisoner behind barbed wire. The only two who can really roam are the person on leave and the escaped prisoner.

Creating a believable and creative NPCs is a good way for a game master to move the story along and into places the players may not find on their own.
