Default Multiple Monitor Setup, is it possible?

So, I've gotten back into sub siming after a long absence. I've been playing U-Boat, some SH-5 (The Wolves of Steel mod), some Cold Waters (Epic Mod), and I got in the mood for playing some American Pacific Navy (a.k.a. SH-4) and found a great updated mod "Fall of the Rising Sun".

I have a triple monitor setup. 3 2560x1440 144hz monitors. I'd like to play the game in surround if possible. Natively the 1.5 version seems to do okay with the 2560 x 1440 monitor at 120 hz (I'm okay with the slightly lower refresh rate) but I'd really like to be able to play it in 7680x1440. Is there a way to do this? AND, while playing in 7680x1440 is it possible to move the GUI to the center monitor?

Thanks in advance for your help.
