Follow the old timers' advice and do not use time compression >256. Things jump out at you before the game can react. Close to your home port be even more careful, there are lots of "friendly" ships to bump into. Do not bother with the Kiel Canal!
Oh, and in GWX the Tommies have planted some mines to the east of Heligoland.
Lastly, do not be too worried about 100% realism. The game cannot do it, and you cannot properly do the jobs of the entire crew. The Allies will get you before the war ends, so find a level you are happy with and have fun.
