Own course + relative bearing = true bearing to target (versus true north, or as some falsely call it 'magnetic')

As for the target course, it is something you will have to visualize on the map and guestimate.
Or if you can somehow gauge the angle on the bow:
intercept angle relative to line of sight = inverse sine ( sine (AOB) * Target speed / your speed )
