I'm unsure about what is exactly modelled in the game and what not, but in real submarines there are lots of factors that can cause uncontrolled dives (And rises).

You should also notice that in depths of 200metres plus you need to put a few more revs on the clock to help prevent her from sinking sloooowly out of control.
When the sub dives very deep the pressure on the hull is so strong that it is bent inwards and the submarine loses "volume" and water displacement. Hence it becomes heavier in proportion to the water that surrounds it, and sinks more or floats less
