Sailaway is good.
I've only played about 3 minutes of
A Painted Ocean, but it looks promising. Seems a little crude at the moment, but I think it's still in development.
I played
Vehicle Simulator a very long time ago. IIRC, it was alright.
Not sailing, but
Bridge Command is a neat simulator for practicing RADAR skills.
