I'll join the crowd here: P-51, P-47 and FW-190 are excellent boom and zoom aircraft because they have an excellent high speed maneuverability, especially elevator authority. In the Mustang you can actually easily rip your wings off, not so easy in any other aircraft. All 109s and the P-38J(you can use maneuvering flaps in the -L and -L-Late) simply lock up when going fast, the 109 just almost and the -38 really completely

Against Jap planes I really like the Fork Tailed Devil, but it's not that good against the faster and more maneuverable Luftwaffles.
