Waffles - one of the few things I indeed miss in my new food regiment. But I filed a permission of consumption for Christmas, like we also will have a potatoe-cheese raclette on holy night, like by now it is tradition in our family.

Every once in while, and that means: rarely, exceptions must be allowed...

I will no longer use a strawberry-rhubarb compote with thick vanilla sauce, however, since it carries an ultra-heavy load of sugar. Instead, not even - sweetend - spray cream from the can, but exclusively hand-whipped cream without sugar, and then cherries from the glass and maybe some bitter chocolate crisps on top - classical Waffles, that is. Belgian waffles? Delicious!
