Sure, but however passionate a dev is about his/her work, they are limited
by professionalism. Generally, professionals can't devote more time to their
work than they are paid for. Doing so in a formal employer/employee
relationship is usually unprofessional and can lead to all kinds of problems.
Then when I am working I have to use my time efficiently. A professional
makes the work fit in to the time; an amateur makes the time to fit the
work in.

It's the reason great artists, as a rule, are self-employed.
