The Flower class corvette was the most famous and common escort unit in convoys, so a good model is just a "must-have" ! But this 3D model seems to be extremly detailed, far too many polygons for SH3 in my opinion. Where does this model come from ?

Basically, because it is his mod. As he says, the guns are easy enough to change with just a little tweak to an eqp file... The modder gets to make the choice. Whether he wants to do a mod to begin with, and then what he wants in the mod. He is using the WoW ship as the basis, the starting point.
